Our premium offset smokers are designed to give you the best cooking experience possible. We offer many more features and options than the typical craft smoker builder. You can order yours as traditional flow offset smoker or reverse flow offset smoker. Tuning plates or no tuning plates. I designed this large firebox so we can watch the game instead of tending a fire all day. We all have other things to do than babysit a smoker. When using large diameter logs I can load up the large square firebox and not add wood for 6 hours or so. You would want to wrap sooner if using that method, The reverse flow system reduces temperature fluctuation by buffering out the fuel consumption rate making an ideal cooking situation for a busy backyard cook. The reverse flow system also balances out temperatures right to left so you don't have a hot side and cold side in your pit. I prefer this system because I have a business to run and can't tend to my smoker every minute. Order your pit with adapters for electronic temperature control and fan stokers. We build smokers as reverse flow or traditional flow. Reverse flow offset smoker system is easier for beginner cooks. Our premium offset smokers come with thicker fireboxes standard and many more features than other builders. We build our offset smokers with thicker fireboxes than you will see at the stores. We use square shaped 3/8 plate fireboxes on our premium line with an insulating heat deflector top to hold the heat in the unit and give you less paint maintenance. Although round fireboxes work just fine, square fireboxes are a major benefit to a cook over round. You can load more wood in a square firebox at a time and let it cook while you mow the lawn or spend more time with your family. Square fireboxes have more head space between the flame and the top of the firebox and mechanically enable us to install heat shield insulators on the top to provide better heat transfer to the main cook chamber while reducing wood consumption and paint maintenance. We build 2" thick all insulated fireboxes on 24" diameter smokers and up. On our insulated fireboxes we use 3/8 plate on the inside, a 1" layer of ceramic 2400 degree insulation in between, and a 3/16 decorative layer as a cover. Insulated fireboxes reduce wood consumption, burn cleaner, and require less paint maintenance than a plate firebox. The insulated firebox is a great option for large backyard and trailer pits to maximize your investment. With purchasing an insulated firebox you can order our performance finishing service including welded corner seam polishing and high end automotive paint. The drawback to an insulated firebox is the design doesn't lend itself to allowing a grilling lid on top. We do accept orders for these with 1/4 thick fireboxes if you are looking to save a little money. 3/8 thick is thicker than 1/4 or 5/16.
